Overview
This is a minimal intervention natural coffee from Yirgacheffe, Ethiopia, produced by Bogalech Muda on her 12-hectare farm. It is certified organic.
The flavor profile is soft and creamy, with a gentle fruit-forward presence that reminded us of blackberry jam, red grape, and chocolate cake with hints of fresh fennel aromatics.
Our roasters found the coffee had an unusually loud first crack and preferred slightly slower approaches to Maillard reactions and lower drop temperatures to avoid toastiness.
When brewed, we preferred higher extraction percentage pour-overs in conical brewers.

Ethiopia is a place where lots of great coffee comes from, as many people know, but it is rare to find coffee that is from a single farmer lot. The supply chain does not inherently support this direct connection but there are some opportunities in this area. Bogalech Muda in collaboration with Royal coffee is one of those opportunities, on the south eastern border of the Gedeo zone, a re small region called Yirgacheffe produces some of the best and well-known coffee from the country. Naturals are plentiful from the country and from this region. 6 cherry pickers are hired at the start of the season to help pick, sort and deliver fresh cherry that is then dried out on beds before three weeks. The small team and allows for excellent communication and consistency among the group. Cherry is then hulled and delivered to the main facility in Addis to go through the dry milling step.
The cup melds between a soft and creamy chocolate and moving over to a floral, fresh fennel and red grape. The crux of fudge and berries, it’s reminiscent of a flourless chocolate cake and blackberry jam on top. This is a likeable coffee in that it has solid flavors done exponentially well. It has the fruit, it has the chocolate but with accents of those herbal notes and botanical-like fennel, you really can’t beat it.
